I've been playing around with 3D hologram-y UI in Unity. This one involved changing UV coordinates as well as tracking of the selected item in script:

 

 

This is a click to move 'map' that I'm playing around with in Unity, not totally sure its function, more of an experiment at the moment. Here's a quick video:
